Writing is the most neglected skill in the TEFL world because teachers don't want to use their limited time in a "quiet" activity. However, I think a period of time in each class could be carved out for simple writing activities. Students could have notebooks that they keep with them and bring to each class where they would practice basic writing skills. As noted in the previous unit, designing lessons to teach writing and speaking could really bring out the creative side of the students, and I think they could be a lot of fun to teach.
